Lindsey’s Christmas Limoncello

We may not be living on the coast of Italy but that never stopped me from making this world-famous alcoholic indulgence. Limoncello was a much favoured Christmas gift elegantly presented in tall glass bottles with cork stoppers and hand-made labels.

Of course, Limoncello is not only for Christmas and as soon as I lay my hands on a basket of lemons and a couple of bottles of vodka, I may be in production again.

Here is the recipe:
20 lemons [wash in hot water to make sure no wax or spray remains]
750 ml vodka or cane spirit
2 cups sugar
4 cups water

Carefully peel the zest from the lemons in wide strips leaving as much pith behind as possible. Place the lemon peels and vodka (or cane) in a large glass bowl and cover. Keep in a cool dry place for 3-4 days.

When the soaking process is complete, bring the sugar and water to boil and stir until completely dissolved. Remove from the heat and cool completely.

Strain the zest from the alcohol and mix with the sugar syrup. Stir well and bottle. Chill very well.

The limoncello is ready to drink either a shot or in a tall glass with sparkling water and ice. Also delicious over vanilla ice-cream.

Will keep in a cool dark place for up to 6 months (if it lasts that long :-)).
